TWO ROCKIN' SUMMER SALADS
As the warmer weather approaches, it's not uncommon for our bodies to shift preference from hearty meals to light, crisp and cool foods. That's why, to me, late Spring and Summer just scream SALAD, FRESH FRUIT & SMOOTHIES!
Here are two rockin' salads to get you started:
STRAWBERRY, AVOCADO & QUINOA SALAD
(Serves 1)

Ingredients:
- 2 cups mixed greens
- 3-4 strawberries, thinly sliced
- 1 tbsp. hemp hearts
- 1 tbsp. sunflower seeds
- 1/2 avocado, diced
- 1/2 cup cooked quinoa
Directions:
- In a large bowl, combine all ingredients. Drizzle with tahini dressing or olive oil & vinegar, and toss.
KALE & QUINOA SALAD
(Serves 1)

- 2 cups baby kale
- 1/2 cup shredded carrot
- 1/2 avocado, diced
- 1/2 cup cooked quinoa
- 1 tbsp. chia seeds
Directions:
- In a large bowl, combine all ingredients. Drizzle with tahini dressing or olive oil & vinegar and toss.
