THE 'REAL DEAL' POTATO SALAD

Two people show up at a BBQ with potato salad. One person's potato salad is white and mushy - the other person's potato salad is AN ACTUAL POTATO SALAD, pictured above. Which would you choose?

I don't know about you, but I'll take a real potato salad over a mayo slop any day!


THE 'REAL DEAL' POTATO SALAD

(Serves 4 as a side, or 2 as a meal)

Ingredients:

  • 1.5 cups quartered baby potatoes
  • 12 stalks asparagus, bottoms trimmed, chopped
  • 1 large carrot, peeled & shredded
  • 1 cup fresh or frozen peas
  • 1 shallot, minced
  • 2 tbsp. extra-virgin olive oil
  • 1 tbsp. red wine vinegar
  • 2 tbsp. fresh dill, roughly chopped
  • sea salt & black pepper

Directions:

  1. Pre-heat oven to 425°F.
     
  2. In a medium bowl, toss potatoes in 1 tbsp. olive oil. Season with salt & pepper and roast for about 20-25 minutes. Add asparagus to the roasting pan for the last 6 minutes.
     
  3. While potatoes are roasting, lightly steam peas until tender and bright green (if using fresh peas, simply leave raw).
     
  4. Once potatoes, asparagus and peas are done cooking, toss together in large bowl.
     
  5. Add carrot, shallot, vinegar and remaining 1 tbsp. olive oil. Toss together. Taste and season with salt & pepper, if needed. Sprinkle with dill and serve.


One thing's for sure, this potato salad definitely screams Spring! Try it out the next time you host or attend a BBQ or potluck.
