FORBIDDEN RICE WITH GRAPEFRUIT BALSAMIC DRESSING

When I was new to living a plant-based lifestyle, brown rice was one of my go-to food staples. It was hearty, filling and easy to make. It wasn't until many years later that I discovered this black jewel - forbidden rice (aka black rice).

Black rice is one of the most nutritious rices on the market, the highest in protein, and contains the highest amount of antioxidants than any rice variety. Other perks include its fibre content, detoxification properties, and that it's gluten-free.

I know rice can taste pretty bland sometimes, but the grapefruit balsamic dressing in this recipe brings a burst of fresh flavour to the dish, while the walnuts and beets add a nice crunch. 


FORBIDDEN RICE WITH GRAPEFRUIT BALSAMIC DRESSING

(serves 2 as a main, 4 as a side)

Ingredients:

  • 1/2 cup uncooked black rice
  • 1 cup vegetable stock
  • 1 pink grapefruit
  • 1-2 small beets, peeled + thinly sliced*
  • 2 tbsp. walnuts, chopped
  • 1 tbsp. green chives, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp. extra-virgin olive oil
  • 1 tbsp. balsamic vinegar
  • sea salt and freshly ground black pepper
  • 1 cup arugula (optional)

*if you don't like the taste of raw beets, you can gently boil them or roast them

Directions:

  1. Cook black rice according to instructions on packaging. To cook mine, I brought 1 cup of vegetable stock to a boil with 1/2 cup rice. I covered the pot, reduced heat to low and simmered for 40 minutes. After 40 minutes, I removed the pot from heat (with lid still on) and let it steam for 10 minutes. Uncover and fluff with fork. Set aside.
     
  2. While rice cooking, zest about a teaspoon of grapefruit peel into a small bowl. Set aside.
     
  3. Peel grapefruit and take out the fruit's flesh (discard the membrane). If you need help with this, The Yummy Life has a great tutorial HERE. Set aside.
     
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, grapefruit zest, salt and pepper. Take 2 or 3 of the grapefruit slices and squeeze the juice into the bowl. Whisk dressing again.
     
  5. Assemble dish: layer arugula (if using), beets, black rice, grapefruit slices, walnuts, cilantro and chives. Drizzle with grapefruit balsamic dressing and toss.


Forbidden rice is also great in sushi rolls or burritos - there are many ways to use this versatile black jewel!
