SUMMER MUSHROOM & GARLIC PIZZA

Back in high school I used to make mini pizzas using pita bread - of course, back then my pizzas were loaded with cheese and pepperoni. Now, times have obviously changed. I love pita pizzas because they are quick and easy to make, so are perfect when you're short on time.

The recipe below is for 1 personal size pizza, but if you're making it for the family or friends just double, triple or quadruple the recipe ;)


SUMMER MUSHROOM & GARLIC PIZZA

(Serves 1)

Ingredients:

  • 1 small portobello mushroom, sliced
  • 7 cremini mushrooms, sliced
  • 2 small cloves garlic
  • 1 shallot, sliced
  • 1-2 tbsp. tomato sauce
  • pinch Italian seasoning
  • 1 small whole wheat pita
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. fresh chives, chopped
  • sea salt & freshly ground black pepper

Directions:

  1. Pre-heat oven to 425°F.
     
  2. In a medium pan, heat olive oil over medium heat and add mushrooms, shallots and garlic (either slice the garlic or smash it with the edge of a large knife if you prefer whole). Season with salt and pepper and cook for 3 minutes. Set aside.
     
  3. In a small bowl, mix together tomato sauce, Italian seasoning, salt and pepper.
     
  4. Flatten out pita bread and place on baking sheet. Spread tomato sauce over pita bread and top with mushroom mixture.
     
  5. Bake in oven for 8 minutes. Remove from heat and let cool 2 minutes. Sprinkle with chives.
