REFRESHING AVOCADO GREEK SALAD

Sometimes you just want something light and refreshing for dinner, right? Greek salad is one of my favourite salads, although I'm not a fan of bell peppers so I normally do without.

What I love about this dish is the crunch you get from the cucumber, the juiciness of the tomato, and the smooth texture of the avocado. The basil adds a fragrant pop of flavour and lemon balsamic dressing adds a tangy punch. A gorgeous + simple salad for those hot summer nights.


REFRESHING AVOCADO GREEK SALAD

(Serves 2 as a main, 4 as a side)

Ingredients:

  • 3 hot house tomatoes, seeded + chopped
  • 1/2 red onion, peeled + chopped
  • 1/3 cup kalamata olives
  • 1 small avocado, chopped
  • 2 mini cucumbers, chopped
  • 2 large leafs basil, chopped
  • 1 tbsp. extra virgin olive oil
  • 1 tbsp. balsamic vinegar
  • 1/2 lemon
  • sea salt + freshly ground black pepper

Directions:

  1. In a large bowl, combine tomato, cucumber, onion, avocado, olives and basil.
     
  2. In a small bowl, zest and juice the lemon. Whisk in the olive oil and balsamic vinegar. Add a pinch of salt and pepper.
     
  3. Drizzle dressing onto salad and serve.
     
  4. If you're looking for a heartier meal, add some quinoa for protein and fibre.
