AVOCADO TOAST WITH SHIITAKE MUSHROOMS & LEEKS

On the mornings that I don't have my usual breakfast smoothie, I rely on avocado toast to provide me with a healthy dose of nutrition and satisfy my morning hunger. One thing I love about avocado toast is the endless possibilities when it comes to toppings. You can sweeten it up with fresh berries and honey, or keep it savory with fresh greens and veggies.

Eating avocado in the morning can help combat overeating later in the day and also help with blood sugar stabilization. The recipe I share with you below combines garlic, leeks, shiitake mushrooms and, of course, avocado.


AVOCADO TOAST WITH SHIITAKE MUSHROOMS & LEEKS

(Serves 1)

Ingredients:

  • 7 shiitake mushrooms, sliced
  • 1 glove garlic, minced
  • 1 medium leek, sliced (white part only)
  • 1/2 small avocado
  • 1 slice whole wheat, Ezekiel or gluten-free toast
  • 1 tbsp. extra-virgin olive oil
  • sea salt & freshly ground black pepper

Directions:

  1. In a medium pan, heat olive oil over medium heat. Add leeks, mushrooms and garlic. Season with salt & pepper and sauté for 3-5 minutes (until mushrooms and leeks are soft). Once cooked, remove from heat and set aside.
     
  2. Toast bread.
     
  3. Peel and mash the avocado. Spread over toast and top with mushrooms and leeks.
