SUMMER DREAMING SMOOTHIE BOWL
I’m totally one of those people who complains about summer being too hot and then winter being too cold – I like a nice medium.
With the very mild winter we’ve had here in Vancouver, it’s got me already thinking about summer, family vacations, and my kids’ favourite – the waterpark!
In fact, I’m munching on this beauty below while planning out my vacations for the year. Last year we hit up Mexico. This year I was in LA for 4 luxurious days - we'll probably head out to the wineries of Osoyoos and hit up a hot destination when the cold and rain make their return.
SUMMER DREAMING (SERVES 1-2)

- 1 cup frozen mango
- 1 frozen banana*
- 4 fresh strawberries, green tops removed
- 2+ tbsp. coconut water (or filtered water)
*Banana freezing tip: peel a very ripe, fresh banana. Slice and place in Ziploc bag to freeze. I do this with all my overripe bananas because they are perfect for recipes like this.
- In a high-speed blender or food processor (I used my Nutribullet), combine fruit and pulse. If needed, add water gradually while continuing to pulse until you achieve a smooth, soft-serve like consistency.
- Pour into bowl and top with favourite toppings (featured: 2 sliced strawberries and 1 tsp. chia seeds).
