AVOCADO & QUINOA SUSHI ROLLS

My husband and I make sure we have at least one date night a month where we hire a babysitter and spend the night on the town. But every so often, we have an in-house 'date night' once the kids are in bed. So, the next time you can't make it out to a posh restaurant, break out this dish and experience the luxury of going out in your own home.

These Avocado & Quinoa Sushi Rolls are customizable and super easy to make. Pair them with a tangy slaw or green salad and you're good to go!

Using quinoa instead of rice bumps up the fibre and protein content. Avocado ensures you get some healthy fat, and seaweed is just awesome in itself as far as nutrients go.


AVOCADO & QUINOA SUSHI ROLLS

(Makes 3-4 rolls)

Ingredients:

  • 1/2 cup dry quinoa
  • 1 cup vegetable stock or water
  • 1-2 avocados
  • 1 carrot
  • 3-4 nori sheets

Directions:

  1. In a small saucepan, bring vegetable stock (or water) to a boil. Add quinoa, cover, and reduce to low heat. Continue simmering on low for about 15 minutes, stirring occasionally near the end.
     
  2. While the quinoa is cooking, slice the avocado and peel and cut the carrot into strips.
     
  3. Place one nori sheet on a bamboo sushi roller and spoon the cooked quinoa on top, leaving about 1 inch from the top. Layer with avocado and carrot on the bottom.
     
  4. Roll the sushi and cut into 5 or 6 pieces.
     
  5. Continue steps 3 and 4 with the remaining nori sheets.

That's it! Have your significant other make the salad while you handle the sushi rolling and you have yourselves a fun, delicious and nutritious meal.
