Rockin' Salutes! My name's Vanessa Baron and I'm a mom, wife, Holistic Nutritionist, Success Coach, free spirit and lover of all things veg. I created The Radiant Herbivore for anyone interested in adopting or refining a plant-based diet. I'm a firm believer that being healthy doesn't mean your life has to be boring or complicated - in fact, I believe food should be an adventure and add some luxury to your life. I learned to ditch the notion of being perfect a long time ago - I still nosh on chocolate, attend BBQs and potlucks, eat out at restaurants and sip on fine wine. You won't find me counting calories or worrying about carb + fat intake either - there's seriously no need when you're nourishing your body with healthy, whole foods!
On my 21st birthday in March of 2006, I decided I would go vegan. I never liked meat growing up - I was always that kid dissecting her food and pulling out long rubbery things only to totally gross out everyone else at the dinner table. When I made my decision, I was very lucky that although my dad laughed at me, he drove me around to whatever stores I needed (even if they were an hour away) so I could eat what made me happy. The thing is, I had no idea what I was doing.
I grew up in a household where we literally ate fast food 4-5 times per week, every week. Although we always had fresh fruit in the house, aside from iceberg lettuce, tomato and cucumber, it was rare for us to have any other fresh vegetables kicking around. The majority of our foods were pre-packaged or frozen - I'm sure you can imagine all the awkward health issues we had. I had zero experience of what 'healthy' looked like and I spent an enormous amount of time trying to figure it all out on my own (at that time I didn't have a computer or a smart phone *say what?!*, so I was limited to whatever I could find at the library most days). Because I didn't educate myself enough, I really started to feel like crap and eventually went back to eating meat.
On my next birthday, I decided to go vegetarian. I'm a strong believer that life's too darn short to try and be perfect - so, I started small. Fast forward to 2016 and I've been a solid vegetarian for about 9 years now and feel absolutely fabulous! Although I maintain a primarily vegan diet, I don't fully live a vegan lifestyle (hard to do when your husband is the meatiest carnivore out there #judgementfreemarriage - but I won't let him kiss me if he smells like meat *gross* ).
In 2014 I graduated from the Canadian School of Natural Nutrition as a Registered Holistic Nutritionist. My areas of expertise include digestion efficiency, thyroid support, and helping women feel drop dead gorgeous in their bodies (whether that's a size 10 or a size 2).
